Scallion Biscuits
Adapted from “Moosewood Restaurant Cooks at Home”
1 ½ c. white flour
½ c. whole wheat flour
2 t. baking powder
½ t. salt
2 T. vegetable oil
1 c. plain yogurt
½ c. minced scallions
1 T. chopped fresh herbs or 1-2 t. dried herbs (e.g. dill, thyme, or rosemary)
¼ t. black pepper
Preheat oven to 400 degrees. Combine flour, baking powder and salt. In another bowl, combine oil, yogurt, scallions, herbs and pepper. Blend yogurt mixture into flour mixture quickly and thoroughly to form a soft dough. On a floured surface, pat dough into a ¾ inch thick circle and cut into eight wedges. Separate wedges and place on an oiled baking sheet. Bake for 20 minutes until golden and knife inserted in center of biscuit comes out clean. Great with soups, stews, or salads.
Creamy Scallion Dip
2 c. sour cream or yogurt
1 t. ground cumin
1 t. chili powder
1 T. lime or lemon juice
Salt and freshly ground black pepper
4 chopped scallions
Great with tortilla chips, omelettes, burritos, beans, or baked/boiled potatoes.
