1 small head cabbage, shredded
1/2 red pepper, diced fine
1/2 green pepper, diced fine
2 stalks celery, diced
2 carrots, shredded
1/2 c. chopped cilantro or italian parsley
1-2 garlic cloves, crushed
1 t. salt (adjust to taste)
fresh ground black pepper to taste
dash of cayenne pepper
1/4 c. more or less fresh lemon juice
1/3 c. more or less sunflower or other light salad oil
Mix all together. Can be eaten right away or covered and refrigerated for a couple of hours. Best eaten within couple of days.
